Hi everybody! I’m so excited with this post since it heralds the start of my recipe series, inspired by a former co-worker who also shares her passion for cooking. I’ve always loved to cook. I started cooking since I was in high school. My family and my husband can attest to my many hits and misses. So how else do I learn by experimenting, right?
So here’s my first, easy, beginner, newbie recipe. I’m not sure if I just made this up or some friend taught it to me. (to that friend, whoever you are, speak up or I’ll take full credit to this dish, hyuk, hyuk)
On to the dish. I named it Tuna Kangkong Express since this is one heck of an easy dish. Little cooking involved and the ingredients are common in one’s pantry, I’m sure. So here it goes.
Tuna KangKong Express
Difficulty - Very Easy
Prep/Cooking Time - 15 to 20 mins.
Ingredients:
- 2 small (or 1 med) can/s of tuna in oil, plain or spicy, drained, set aside oil
- 1/2 head of garlic, chopped
- 2 bundles of kangkong, leaves and stems sliced to bite pieces
- 1 cup oyster sauce
- Fry garlic until medium brown, drain oil and set aside.
- Have 5 cups of water in a pot and bring to a boil. Put in kankong and boil for 10 mins, drain and set aside.
- Put drained kangkong in a mixing bowl and mix it with 4-5 tablespoons of tuna oil until the all the kangkong are moist with the oil. If you don’t like the tuna oil, use sesame oil or olive oil for the health conscious.
- Top kangkong with tuna and pour in oyster sauce. Put in less oyster sauce if you want it less salty.
- Sprinkle fried garlic bits on top and serve
Approx. Cost - Php 90-100
